Making Mustard and Ketchup - GAPS

I'm using Dr. Natasha's recipes from Internal Bliss.  I made some substitutions to use what I had.

1 tsp mustard seed will make 2 tsp ground.

1 1/2 tsp salt + 1/4 tsp celery seeds= 2 tsp celery salt
cinnamon stick = 1 tsp ground.  (to be safe, I just put 1 1/2 tsp in double recipe
1 whole teaspoon ground allspice = 5 whole allspice berries
( For 1/2 tsp allspice berries, I estimated it was 3 berries, so  1/4 tsp ground.)

Also, used the crock pot for cooking the vinegar and the last 2 hours, and a stock pot for the tomato sauce.
