Baked Salmon Loaf. Photo by CountryLady
Saves time compared to frying patties!
GAPS legal if omit milk and crumbs.

Kept the juice in the can, halved or omitted the milk, omitted crumbs and crackers - super!!

1 (2 lb) can salmon, flaked (I use one large can and one small can)
4 tablespoons melted butter , divided
4 eggs, slightly beaten
1 cup milk  [(used buttermilk or canned salmon juice)]
2 teaspoons lemon juice
 1 teaspoon salt
2 dashes pepper

2 small chopped onion
1 cup bread crumbs
2 tablespoons chopped parsley or 2 tablespoons green pepper
1 teaspoon sage (optional)
2 Ritz crackers, crushed(substitute)
lemon wedges or
tartar sauce: 1 cup light mayonnaise , 1/4 cup sweet pickle relish , 2 tablespoons fresh lemon juice

Combine ingredients in order given except crackers and half butter.
Pack firmly in buttered loaf pan and bake in a 350 degree oven for 30-40 minutes.
For topping: Mix enough butter in with the Ritz crackers to moisten.
Sprinkle generously on top of casserole.
