Raspberries, Apples, Hazelnuts, Chocolate

What dessert shall I make....
I can do an Raspberry Apple Cobbler with coconut or gf AP mix flour
Or a parfait of Raspberries, Hazelnuts, Chocolate?

Definitely will want whipped cream for either.

I'm thinking the cobbler, because I can easily have leftover. :) Oh yes.

Although, I really, really like the second idea better!

Actually, the second idea is also better because I can use the raspberries fresh! Win.

 So, the parfait buffet will include:

Creme
Cremec
Creme Anglaise
chocolate syrup (10 T. cocoa, 8 T. butter/oil, 6 T. honey,  4 dashes salt, 2 T. Peanut butter)
Raspberries
Raspberries soaked with honey (Experimenting which is better)
granola
Chopped hazelnuts
coconut flakes
whipped cream

with coffee!
Ok, here's the Anglaise recipe I found, edited by me:

Honey and Vanilla Creme Anglaise
  • 2 c raw milk or equal parts milk and cream.
  • 1/2 vanilla pod 
  • 1/4 c raw honey
  • 5 pastured egg yolks **
  • pinch salt
Method:
Prep strainer and ice.*

Heat the milk gently using a wooden spoon .  Add vanilla. Don't boil.
Mix rest of ingredients in bowl.
Slowly pour a few tablespoons of the hot milk into bowl, and gently whisk.  Turn off the heat. Slowly pour this mixture into the hot milk. Gently whisk into the milk until smooth. Turn the heat to medium-low. stir the milk and yolks gently until the custard begins to thicken.

Stir more rapidly as it thickens.  *If the custard starts to get grainy and “break,” quickly take it off the heat, pour it through the strainer and put it over ice as you whisk it until it cools.

*When custard is thickened, pour it through the strainer and cool the mixture by whisking (you can put the bowl over ice to help chill it faster). Stir once in a while to be sure it is chilled before covering and chilling. It gets much thicker as it cools. 
Makes about ? cups.

**Used the whites in burgers, scrambled eggs, and baking biscuits.
