GAPS Stuffed Cabbage Soup

Hospital Duties
Fold away all your bright-tinted dresses,
Turn the key on your jewels today,
And the wealth of your tendril-like tresses
Braid back in a serious way;
No more delicate gloves, no more laces,
No more trifling in boudoir or bower,
But come with your souls in your faces
To meet the stern wants of the hour.
Look around! By the torchlight unsteady
The dead and the dying seem one —
What! Trembling and paling already,
Before your dear mission's begun?
These wounds are more precious than ghastly —
Time presses her lips to each scar,
While she chants of that glory which vastly
Transcends all the horrors of war.
Pause here by this bedside. How mellow
The light showers down on that brow!
Such a brave, brawny visgage, poor fellow!
Some homestead is missing him now!
Some wife shades her eyes in the clearing,
Some mother sits moaning distressed,
While the loved one lies faint but unfearing,
With the enemy's ball in his breast.
Here's another — a lad — a mere stripling,
Picked up in the field almost dead,
With the blood through his sunny hair rippling
From the horrible gash in his head.
They say he was first in the action;
Gay-hearted, quick-headed, and witty:
He fought till he dropped with exhaustion
At the gates of our fair Southern city.
Fought and fell 'neath the guns of that city,
With a spirit transcending his years —
Lift him up in your large-hearted pity,
And wet his pale lips with your tears.
Touch him gently; most sacred the duty
Of dressing that poor shattered hand!
God spare him to rise in his beauty
And battle once more for his land!
Pass on! it is useless to linger
While others are calling your care;
There is need for your delicate finger,
For your womanly sympathy there.
There are sick ones athirst for caressing,
There are dying ones raving at home,
There are wounds to be bound with a blessing,
And shrouds to make ready for some.
They have gathered about you the harvest
Of death in its ghastliest view;
The nearest as well as the furthest
Is there with the traitor and true.
And crowned with your beautiful patience,
Made sunny with love at the heart,
You must balsam the wounds of the nations,
Nor falter nor shrink from your part.

Soaked Flour Muffins

Experiment with additional eggs, egg powder.
4 cups of whole grain flour, preferably freshly ground (I used whole wheat) + additional raw nuts/nut flour
1 1/2 cup sour dairy, such as buttermilk, yogurt, kefir, or clabber (could also use water + 4 TBS lemon juice, whey, or apple cider vinegar)
1 cup melted butter/ghee or coconut oil (lard or tallow might be ok too)
2 cup pureed pumpkin, squash, carrot or sweet potato (could also use mashed banana or apple/pearsauce) lessen with honey
1 1/3 cup sucanat/rapadura or granulated palm/maple sugar {replace with 2/3 c. honey
4 eggs, pastured or free-range organic
1/2 tsp baking powder
3 tsp baking soda
1 1/2 tsp sea salt
1/2 tsp cloves
1 tsp cinnamon
1/2 tsp nutmeg
Optional add-ins: 1 cup dark chocolate chips, raisons, dried cranberries, chopped dates, coconut flakes, or crispy nuts
In a glass bowl, combine the flour, sour dairy, and melted fat together. Cover with a clean dish towel or plate and allow this mixture to soak at least 8 hours, or even better, 24. ...You need warmth.
Once the batter has had a good soak, add in the rest of the ingredients. Fold in your add-ins at the end, if using.
Pour into greased muffin tins (preferably not aluminum or non-stick — stoneware is good). Bake in a 325 degree oven for about 30-35 minutes. A toothpick inserted into the center should come out clean

Soaked Flour {Sweet} Biscuits

Using this for hot cross buns
- ¾–1 c. milk or buttermilk or yogurt [3/4, if adding 1/3 c. honey/poppyseed paste after soaking]
2 c. flour (can use ½ whole wheat flour) (used half King A. GF flour)
3 tsp. baking powder
½ tsp salt
¼ c. butter , cold
Instructions
425 degrees, (parchment paper works great)
- * Mix dry ingredients. Cut fat into mixture. Fork in the milk. Only stir enough to get the dough uniform! Roll out and cut (or you can make rounds by hand), about 1 inch thick.
- Bake for 13-15 minutes.
- * Soaked: Cut fat into flour and mix with cultured buttermilk or yogurt. Leave on counter overnight, then sprinkle the baking powder and salt over the top and fold in as thoroughly as possible yet with as few strokes as possible.
- make ? Honey glaze, just add enough cornstarch to make white.

INGREDIENTS
- 1 package refrigerated crescent rolls, preferably Pillsbury
- 8 large marshmallows
- 3 Tablespoons melted butter or margarine
- ¼ cup granulated sugar
- ½ tsp cinnamon
INSTRUCTIONS
- Mix cinnamon and sugar together ahead of time.
- Melt butter in microwave ahead of time.
- Preheat oven to 375. (Turn oven on just before beginning to assemble rolls.)
- Separate crescent rolls and lay individual triangle on workspace.
- Dip marshmallow in butter and roll to thoroughly coat.
- Roll buttered marshmallow in cinnamon sugar mixture.
- Place marshmallow on narrow tip of crescent dough and roll toward the large end.
- Pinch dough together firmly at edges and any thin spots.
- Place on ungreased baking sheet.
- Bake 10-15 minutes until golden brown.
Ice when cool:
- 1/4cup powdered sugar
- 1to 2 teaspoons milk

Torta de Santiago - Almond Cake
Easter specialty of Galicia.
Serves 10
- 1/2 pound (1 3/4 cups) blanched whole almonds [used 1 1/2 cups almond flour] 4 1/2
- >1/4 t. salt [3/4
- 6 large eggs, separated [Commenters recommended not separating, but adding one at a time for authentic density.] 18
- 1/2 tsp Cream of tartar [skip]
- 1 1/4 cups superfine sugar [used regular, 3/4 c] 3/4 c. honey
- Grated zest of 1 orange
- Grated zest of 1 lemon
- 4 drops almond extract - CINNAMON/berry juice? see below [12
- Confectioners' sugar for dusting -
Preparation
- Grease an 11-inch springform pan, with butter and flour. Finely grind the almonds. 350 degrees.
- , beat the egg whites Fold them into the egg and almond mixture - below.
- beat the egg yolks with the sugar to a smooth pale cream. Beat in the zests and almond extract. Add the ground almonds and mix very well.
- Pour in the cake batter. Bake for 40 minutes, or until it feels firm to the touch. Let cool before turning out.
- Just before serving, dust the top of the cake with confectioners' sugar. Or, if you like, cut a St. James cross out of paper.

Extra-Customizable Quick Bread for Any Occasion
- 4 eggs
- 3 cups milk/yogurt w/ water (or 1 cup milk plus 2 cup pumpkin purée, applesauce, mashed bananas; or 2 cup milk and 1 cup strong coffee or citrus juice)
- 2/3 cup fat
- 1 t vanilla
- 1 to 2 cup sweetener
- 4t baking powder
- 1/4 t salt
- zests or spices,
- 6 cups all-purpose flour (sub in up to 1 ½ cups alt flour—or up to ⅓ cup cocoa powder)
- 1 to 2 cup oats, coconut flakes, chopped nuts, seeds, chocolate chips, and/or dried fruit (optional; mix and match up to a cup’s worth in total)
Preheat the oven to 350° F and grease, wax paper, a 9x9 pan.
Pour batter into the prepared pan, and sprinkle something—coconut, sunflower, sugar—over the top. Bake, turning once halfway through, for 35 to 50 minutes. Toothpick tests clean.
Let cool in the pan until cool enough to
handle, tip the loaf out. let it cool completely before slicing.
